Vegetarian Pesto Gnocchi

Do we have any gnocchi fans out there? Gnocchi are potato dumplings, also called ‘Italian pasta’, and are a great carbohydrate option for your meals. 

Vegetarian pesto gnocchi is easy to make and full of flavour, so give it a try! This recipe takes 5 minutes of preparation, 10 minutes of cooking time and makes 4 servings.

Ingredients

  • 1 tbsp olive oil
  • 2 handfuls fresh green beans
  • 1 pint cherry tomatoes
  • 1 package (approx. 2 cups) potato gnocchi 
  • ½ cup pesto
  • 1 cup mozzarella (grated or cubed) 
  • 1 tsp salt

Instructions

  • Set a large pot of water to boil over high heat and put a large pan over medium heat.
  • Add olive oil and green beans to the pan and cook for 3 minutes, then add the cherry tomatoes and continue to cook until the green beans are tender and slightly browned on the outside. 
  • Add salt to the boiling water, then add the gnocchi. Let the gnocchi cook until they float to the surface of the pot. 
  • Drain the gnocchi and add it to the pan with the green beans and tomatoes. Stir in the pesto. 
  • Divide among 4 plates or bowls and top with the mozzarella cheese. 

You’re welcome to add additional vegetables or different types of cheese to enhance the flavour to your liking. You can also store this meal in the fridge and reheat it for leftovers.
