It’s healthy, it’s fresh and it leaves you feeling full. What is it? Tortellini and veggie salad!
This simple recipe requires 15 minutes of preparation, 8 minutes of cooking time and makes 6 servings. Let’s get started…
Ingredients
- Lemon vinaigrette:
- ⅓ cup extra virgin olive oil
- 4 tablespoons fresh lemon juice
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Salad:
- 1 package cheese tortellini (approx. 4 cups)
- 2 cups cooked or canned corn
- 1 ½ cup cherry tomatoes
- 1 large zucchini
- ¾ cup crumbled feta cheese
- 15 fresh basil leaves
Instructions
- Lemon vinaigrette:
- Combine all ingredients in a bowl and whisk to combine.
- Salad:
- Cook tortellini according to package instructions. After it’s cooked, drain the tortellini and drizzle lemon vinaigrette over the pasta to keep it from sticking. Set aside to cool to room temperature.
- Halve the cherry tomatoes and slice the zucchini.
- Once the tortellini is cool and veggies are cut, add the pasta, corn, tomatoes, zucchini, feta and basil leaves into a large bowl. Toss to combine.
- Optional: Add additional salt and pepper to taste if preferred.
You can either serve tortellini and veggie salad immediately or refrigerate it for a later meal. It’s as easy as that!
