Simple Chicken & Veggie Wraps

You can’t go wrong with chicken and veggies, so let’s throw them into simple, tasty wraps. This is a great option for workday lunches or family dinners. 

The following recipe takes about 15 minutes of preparation, 20 minutes of cooking and serves 6 wraps.

Chicken and veggie wrap.

Ingredients

  • 1 chicken breast 
  • 1 packet southern fried chicken coating (or your preferred coating) 
  • Small wheel of brie cheese
  • 1 bag spinach 
  • 2 large tomatoes 
  • 1 yellow pepper 
  • Mayonnaise 
  • Tortilla wraps

Instructions

  1. Pre-heat oven to 350 degrees fahrenheit. 
  2. Slice chicken into thin strips.
  3. Put southern fried chicken coating in a small bowl, coat the chicken strips and place on a pan covered with baking paper. 
  4. Bake chicken in the oven for 15 – 20 minutes or until cooked. 
  5. While the chicken is baking, dice the tomatoes and pepper. Slice the brie into thin strips. 
  6. Remove the chicken from the oven and place chicken, veggies, brie and mayonnaise evenly in the middle of each tortilla. 
  7. Pull one end of the tortilla over the ingredients and roll it into a wrap.

These are best served fresh, but can also be refrigerated overnight and still taste delicious.
