Mushroom, Spinach & Artichoke Pasta

Mmmmm, pasta! There’s nothing like a tasty, healthy pasta dish to excite the taste buds. Mushroom, spinach and artichoke pasta takes around 10 minutes of preparation, 20 minutes of cooking time and makes 6 servings.

Ingredients

  • 2 handfuls of fettuccine
  • 1 can quartered artichoke hearts (drained)
  • 10 thinly sliced cremini mushrooms
  • 1 yellow onion (thinly sliced)
  • 2 garlic cloves (thinly sliced)
  • ½ teaspoon dried basil
  • ¼ teaspoon dried thyme
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 cups baby spinach
  • 1 cup freshly grated Parmesan
  • 2 tablespoons butter

Instructions

  • In a large pot over medium heat, combine fettuccine, artichoke hearts, mushrooms, onion, garlic, basil, thyme, red pepper flakes and 4 ½ cups of water. Season with salt and pepper to taste.
  • Bring water to a boil, reduce heat and simmer (uncovered) until pasta is cooked through and liquid has reduced. This should take between 12-15 minutes.
  • Stir in spinach, Parmesan and butter until the spinach has wilted (approx. 2-3 minutes). 
  • Serve immediately. You can also garnish with extra Parmesan if you have any left over!
