Mmmmm, pasta! There’s nothing like a tasty, healthy pasta dish to excite the taste buds. Mushroom, spinach and artichoke pasta takes around 10 minutes of preparation, 20 minutes of cooking time and makes 6 servings.
Ingredients
- 2 handfuls of fettuccine
- 1 can quartered artichoke hearts (drained)
- 10 thinly sliced cremini mushrooms
- 1 yellow onion (thinly sliced)
- 2 garlic cloves (thinly sliced)
- ½ teaspoon dried basil
- ¼ teaspoon dried thyme
- ¼ teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
- 2 cups baby spinach
- 1 cup freshly grated Parmesan
- 2 tablespoons butter
Instructions
- In a large pot over medium heat, combine fettuccine, artichoke hearts, mushrooms, onion, garlic, basil, thyme, red pepper flakes and 4 ½ cups of water. Season with salt and pepper to taste.
- Bring water to a boil, reduce heat and simmer (uncovered) until pasta is cooked through and liquid has reduced. This should take between 12-15 minutes.
- Stir in spinach, Parmesan and butter until the spinach has wilted (approx. 2-3 minutes).
- Serve immediately. You can also garnish with extra Parmesan if you have any left over!
