Chili Lime Chicken Salad

This recipe is packed with healthy veggies, tender chicken and loads of flavour. It takes 20 minutes of preparation, 30 minutes of cooking time and makes 6 servings. Let’s get started!

Ingredients

  • 2 boneless chicken breasts
  • 2 tbsps canola oil (or any oil of your choice)
  • ½ tsp chili powder
  • ½ tsp smoked paprika 
  • ¼ tsp garlic powder
  • ¼ tsp sea salt
  • 1 red bell pepper
  • 2 large tomatoes
  • 2 avocados
  • 2 cups baby spinach 
  • 1 lime (juiced)

Instructions

  • Preheat the oven to 400 degrees fahrenheit.
  • Place chicken breasts in a baking dish. Drizzle with half the canola oil and season with chili powder, smoked paprika, garlic powder and sea salt. Rub the oil and seasoning all over both sides of the chicken breasts. 
  • Bake the chicken in the oven for 25 – 30 minutes or until cooked. Then, let the chicken rest for 10 minutes before dicing it. 
  • Meanwhile, dice the red bell pepper and tomatoes. Add to a bowl with the lime juice and remaining canola oil and mix together.
  • Peel and cut the avocados into cubes. 
  • Divide the spinach and avocado into 6 containers, followed by the pepper and tomato mix. 
  • Top up each container with the diced chicken to finish your meal prep!
