Chickpea & Veggie Salad

It’s great to have easy, go-to recipes on hand for when you need to whip up a meal in a hurry or want to fast track your meal prep. Our chickpea and veggie salad recipe only takes 10 minutes of preparation and makes 4 servings!

Ingredients 

  • 2 cans of canned chickpeas
  • 2 cups baby tomatoes 
  • 1 red or yellow pepper 
  • 1 small red onion
  • ½ packet traditional feta cheese
  • 1 cup olives (optional)
  • Greek dressing (or dressing of your choice)

Instructions

  • Drain canned chickpeas and empty them into a medium-sized bowl.
  • Slice baby tomatoes in half and add to the chickpeas. 
  • Chop red or yellow pepper, as well as red onion, and add to the other ingredients.
  • Break up and sprinkle feta cheese over all ingredients. 
  • Add olives (optional) and dressing to the bowl and mix. 

If you want to turn our chickpea and veggie salad into a hot meal, simply add the contents to a tortilla wrap and cook using a sandwich press, pan or grill.
