Black Bean Burrito

Looking for a quick, healthy meal this summer? Try our black bean burrito! This recipe takes 5 minutes of preparation, 15 minutes of cooking time and makes 4 black bean burritos.

Ingredients

  • 1 cup white or brown rice
  • 1 can black beans
  • 1 jar salsa (homemade or store bought) 
  • 1 pepper (green, red or yellow)
  • 4 tortillas
  • Grated cheese (optional)
  • Salt and pepper (optional) 

Instructions

  • Put a pan on the stove at low heat.
  • Dice the pepper, then put in the pan. 
  • Drain the black beans and add to the pan with the pepper. Cook and stir until the pepper is soft. 
  • While the black beans and pepper are cooking, prepare the rice according to the packet instructions. (I.e. On the stove, in the microwave or using a rice cooker.) 
  • Put four tortillas on the counter in preparation for building your black bean burritos. 
  • When the rice is done, add to the pan and mix with black beans and pepper.
  • Take the rice/black bean/pepper mixture and place evenly on tortillas. 
  • Add salsa to each tortilla. 
  • Add grated cheese and salt and pepper to each tortilla (optional).
